Pork Cushion sous vide and smoke


  • salt
  • cayenne
  • grains of paradise
  • cloves
  • garlic powder
  • cardomum
  • lime juice

sous vide 140f 24 hrs (probably 130 would be fine next time)

smoke over wood

accidentally left lime out of two of the six packages and the lime was noticeably punchy when comparing them.
